General Manager

“With more than 20 years experience in the hospitality industry, I started my career in big chain hotels such as Sheraton, Le Meridien and Hilton. As a Food & Beverage Manager for a Relais & Chateaux Hotel in Zurich I worked for a small luxury country house hotel for the first time and much preferred the attention to detail and guest orientated service to the bigger bedroom factories I’d worked for in the past. After moving to the UK I worked for some beautiful country houses such as Summer Lodge Hotel and Ettington Park, before I took on my first General Manager role on the island of Jersey.  Before I finally joined Burley Manor to head the team, I oversaw the opening of a Golf Resort in the USA.

As a General Manager I am always looking for a beautiful property in a great location and Burley Manor is just that – A wonderful restaurant & rooms in a very special location! I love the concept of a country house with a twist, it makes Burley Manor very special and I like to be different.

We strive to ensure that all of our guests have a memorable and enjoyable stay with us, so my biggest tip to people visiting would be to take advantage of the team’s skills & knowledge of the area and everything about the Burley Manor experience. I’d also highly recommend sinking into a sofa in our lounge or drawing room for afternoon tea or tapas – The ideal spot for a relaxing afternoon in the New Forest.”

“Having had 20 years experience in the catering industry, working in many rosette & Michelin star restaurants across England & Wales, I came to work in the kitchen at Burley Manor over a year ago. 

The beauty of running a kitchen in the New Forest is the ability to source produce from forest to coast and the unrivaled choice of local suppliers we have is so unique. Not to mention that view as you drive up to the Manor – we’re very lucky.

Our kitchen garden full of veg and herbs is also one of my favourite things about working here. We utilise these fresh ingredients in our dishes daily and that is a true pleasure as a chef.

My tip to guests eating here would be to try an evening with friends or family in the Butler’s Pantry, where you’ll see your food being cooked right in front of you in our wood-fired kitchen by us – An experience like no other!”

“With over 12 years experience in the hospitality industry, I have worked for many rosette & Michelin star restaurants across England, giving me a huge passion for wine, good food and first-class service.

Burley Manor is a glorious building with so much character around each and every corner. It’s set in such a beautiful location allowing guests to admire the New Forest and all its wildlife, whilst enjoying world class food and drink. I love that the boutique rooms are all set apart with gorgeous interiors and you can really tell that the restaurant had a lot of heart and soul poured into every drop of its design.

My tip to guests dining in our restaurant would be to always try something a little different or new, whether it’s some of our rustic tapas dishes or one of our recommended wines of the week. If you’re staying with us then pack those walking boots, you’ll be staying in one of the best locations in England and you should use this chance to lap up everything this place has to offer. We’re certain that you’ll love it!”

“Watching the transformation of Burley Manor since the very start has given me great pride to welcome guests and to see them enjoy it as much as I knew they would. It has been a fantastic journey from the start of the renovations right up until today and I look forward to seeing it grow even more in the future.

What I love about the Manor is the picturesque views and New Forest surroundings, the wellbeing treatment rooms and ultimately the team I work with!

“With five year’s experience within the beauty industry I joined to form the wellbeing team in August 2016. Prior to this I worked within a large hotel group in the New Forest where I specialised in a wide range of spa treatments. Within my short time here I have progressed to Senior Therapist.

From my regular clients to meeting new ones, I love to provide high quality treatments and my favourite thing about the job is making people feel special and pampered.  My tip to those visiting us would be to lie back in our relaxation room before and after your treatment to re-energise and take some well-deserved time-out.

If I had to choose from our luxurious treatment list I would definitely have to recommend our rejuvenating massages and skin boosting facials as I feel very passionate about making my clients feel happy about their skin”.


Wedding & Events Manager

“Before joining the team at Burley Manor, I worked as a wedding organiser for Hampshire County Council’s events team in Winchester and also at Sir Harold Hillier Gardens in Romsey for the catering team helping with weddings and events.

I love that I have the opportunity to meet happy couples every week and get to see the end result of all the planning on their wedding days. You can’t beat the smell and warmth of the fire place in the winter and the stunning forest views out the front of the Manor.

My tip to guests having an event with us would be, when dressing The Barn – less is more”!
