A vegetarian feast with Simon Rimmer

Last night Simon Rimmer joined us in the barn for an extraordinary vegetarian banquet – With guests arriving from 7pm, the beautifully decorated barn began to fill quickly with guests eager to see Simon. Welcomed with a glass of Perrier-Jouet, our favourite of course and the warm crackling open log fire at either end of the barn.
The atmosphere was bubbling with anticipation and excitement as Simon Rimmer joined the room full of chatter and laughter before everyone took their seats. Before the starters were served Simon took to his feet and gave an overview of his story to becoming a chef.
Many in the room were shocked to discover he never planned to become a chef, he actually started out as a Fashion and Textiles student until a drunken idea turned into reality. At this point he didn’t realise he’d have two thriving restaurants (Greens and Earle), four cookery books and a successful career as a celebrity chef!
All four of the dishes served were carefully crafted and chosen by Simon himself and can be found in his vegetarian cookbook ‘The Accidental Vegetarian’. To start was a delicious serving of fried halloumi served with a lemon and caper dressing, followed by a light salad of scorched broccoli and quinoa topped with a special New Forest green goddess dressing.
As each course was served Simon spoke about why he loved each dish, as he does in his cookbook. Before the main course (bean casserole) he simply said: ‘I think there’s something sexy about this dish; we always imagine casseroles to be heavy and robust, but this one has a lightness with a simple tomato base, lots of beans and lemon. Topped with arancini it’s hard-core’.
To finish the dinner Simon chose what he referred to as ‘king’ of desserts, a creamy and chocolatey Zucotto. Before the night came to a close, Simon chatted with all the guests, signed their books and took a selfie or two!
